Michel Troisgros (local Michelin-starred chef) and Stéphane Sérol cultivate and vinify this vineyard together as a separate wine from the Domaine Sérol range. It was originally planted by their fathers more than 20 years ago. The soil is perfectly adapted to the local grape variety (Gamay Saint-Romain). Vines are planted at a high density (8,500 per hectare). Grass and other cover-crop maintained with added natural organic matter and soil is worked with machine while other tasks (de-budding, de-leafing) are by hand.
Terroir: Steep, south-facing hill with a cow pasture below, fairly-shallow porphyry soil, hard granite bedrock with narrow fissures.
