Vineyard & Cellar

Vinification
Each parcel vinified separately. Direct pneumatic pressing, 1-2 days settling, alcoholic fermentation in barrel, (maximum 30% new). Racked after 12 months, aged for additional 6 months in 5 to 6-year-old barrels, unfined, light Kieselguhr filtration

Soils are plowed, compost is organic, and a very careful pruning limits yields. François’ goal is to preserve minerality and the specific character of each appellation.
