- After that, oak barrel ageing lasts from 12 to 15 months, depending on the vintage, with regular batonnage (lees-stirring) through to malolactic fermentation.

100% Chardonnay. Pressing by pneumatic press is light and controlled. Alcoholic fermentation is done at low temperature on fine lees, in barrel. We pay great attention to the quality of the lees. These will give the roundness and complexity of aromas we are looking for. At barrelling, we ensure that there are sufficient lees present.
