From the Archive
Delicacy, density, and an innate sense of balance are typical of this great wine. Its colour is intense, the nose is very expressive with violet and red fruits aromas like cherry or morello cherry, which express a great complexity. The mouth is fleshy and concentrated, and the tanins are fine, velvety, and elegant.
Harvesting : by hand, and strict sorting on 2 sorting tables, one of which is vibrating.
Wine-making : stalking, cold maceration for about 3 to 5 days, temperature control, crushing and pumping over 2 to 3 times a day, total fermentation on skins: 18 to 20 days according to vintages.
Maturing : 16 to 18 months in French oak barrels, 30 % to 40 % of which are new, bottled by us at the winery.
