  • Vinification: 3 hours' gentle pneumatic pressing, 24 hours' cold-settling, indigenous yeast fermentation. 18-22 months' aging, fining if necessary. 
 

Additional Info

In the vineyard, the rootstock is entirely massal selection. These vines are fairly weak, and were severely attacked by the court-noué virus. The change to biodynamic agriculture has improved vine health overall, though yields are still low: 20-35 hl/ha on average.
